The symbol of Piemontese conviviality, and a perfect sauce for raw or cooked vegetables, especially roast peppers.

Pickled turnips, a dish one would associate with Northern Europe but is actually from Friuli.

Celery Boats with Cheese Foam: Sedanini alla Spuma di Formaggio
Celery boats with a creamy cheese foam make a perfect antipasto.
Difficulty: Easy

Creamy Bavarian Cream: Bavarese Vellutata
An unusual, delicate mixed vegetable Bavarian cream that's also quite elegant.
Difficulty: Moderate

Creamed Celery to go with Boiled Meat: Sedani per Contorno al Lesso
Celery in a cream sauce, to be served with boiled meats (or whatever else suits your fancy).
Difficulty: Easy

Curried Watermelon: Anguria al Curry
Watermelon is an unusual base for a curried dish.

Mixed Boiled Vegetables: Bollito Misto di Verdure
Boiled vegetables, served chilled with olive oil, are a surprisingly refreshing summer side dish!

Meatless Canederli: Canederli di Magro
Delicately flavored meatless bread balls might sound like an odd accompaniment for a stew or roast, but they work very well. From the Dolomites.
Difficulty: Moderate

Mushroom Canederli: Canederli ai Funghi.
A delicate side dish that smells of the forest.
Difficulty: Moderate

Neapolitan Fritto Misto: Frienno e Magnanno alla Napoletana
A rich Neapolitan mixture of fried meats, fish, veggies, croquettes and more. Elegant, too.

Onions: Cipollata
Stewed onions with tomatoes. A good use for a lot of onions.
Difficulty: Easy

Onions with sardines, a hearty dish that's perfect for perking up a flagging appetite.

Tasty sweet & sour onions to accompany drier meats or fish.

Onions Stuffed with Tuna: Cipolle Ripiene col Tonno
Onions filled with tuna, a Ligurian treat that will be perfect in summer.
Difficulty: Moderate

Pickled Onions: Cipolline Sotto Aceto
Pickled onions: a perfect antipasto, especially when it's hot, and will also go well with fattier meats.

Polenta with beans makes for a tasty antipasto, or a nice accompaniment to a roast or stew.

This traditional genovese specialty can also go nicely as a side dish with a stew, especially if made without the pasta shell.

Similar to Ravioli, but with a Dolomitic twist. Perfect with a stew.

Zesty stuffed onions.
Difficulty: Moderate

Stuffed Onions: Cipolle Ripiene
Onions stuffed with leftover roast meat, or whatever was handy, traditional country fare food from the Canavese region in Piemonte, and nice at home too.
Difficulty: Moderate
