"Everybody knows that artichokes can be grilled and served as an accompaniment to a steak, or any other sort of roast," writes Artusi."In this case you will want tender artichokes. Trim the stalks at the base, leaving the leaves intact. Spread them out well so that the seasoning, which should consist of just olive oil, salt, and pepper, can penetrate.
Set the artichokes upright on the griddle, pinning them together with skewers through their bases if need be to keep them upright. Baste them again when they're partially cooked, and keep them over the coals till the outer leaves begin to burn.
