Fried Acacia Blossoms - Fiori D'Acacia Fritti

Acacia trees are in bloom as of this writing (late May), and Marlene has written to say she enjoyed the blossoms, fried and dusted with powdered sugar, she was served at a restaurant in San Dona del Piave years ago, and how did they do them? These fried acacia blossoms may not be a perfect match but they'll be close:

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 16 bunches of acacia blossoms
  • 2 eggs, beaten
  • A pinch of salt (if you're making savory blossoms as a side dish)
  • A bowl of flour
  • Oil for frying
  • Salt, confectioner's sugar, or acacia honey

Preparation:

Pick your blossoms from a tree that's as far as possible from sources of pollutants such as roads. When you get them home, look them over and remove any insects you see, then gently rinse them (if need be; if they're clean and from a clean spot this shouldn't be necessary) and gently pat them dry.

Heat your oil.

Dredge the flowers in the beaten egg (add a pinch of salt if you're making savory flowers), coat them with flour, giving them a good shake to remove excess, and fry them until golden.

Drain them on absorbent paper and they're ready.

If you're serving them as a side dish, say with fried zucchini blossoms, dust them with a little more salt.

If you're serving them as a dessert dust them with powdered sugar, or drizzle them with a little bit of acacia honey.
